How to Cook a Frozen Roast

Forgot To Thaw the Roast…

Have you ever had a beef roast in the freezer that you forgot to thaw, but you really want roast for dinner? Well, I say, cook it frozen! Years ago, that frozen brick of a roast would keep me from getting a lovely dinner on the table, but I learned that a frozen roast makes a delicious dinner…eventually. In fact, this dinner is my ‘easier than a crockpot’ dinner for days when I just want a nice dinner without all the fuss.

Cooking Your Frozen Roast to Perfection

I love to use this trick on the weekend or even on a work day when I can throw the roast in at 7:45 a.m. and take it out around 4:00 p.m. This slow & low method of cooking your roast results in a tender, juicy treat for dinner. Definitely try this and see what you think.


  1. Get out a frozen beef roast such as a rump, arm or chuck.
  2. Remove packaging and soak in cold water to remove strings if necessary. If there are no strings, go to step 3.
  3. Place roast in a roasting pan (a cake pan or glass dish with sides will work).
  4. Dice several cloves of garlic (depending upon your love of garlic).
  5. Rub frozen roast generously with organic virgin olive oil.
  6. Rub garlic all around the roast.
  7. Generously coat in salt and pepper to your preference. We prefer freshly ground pepper and Himalayan Salt.
  8. Add 1/4 cup to 1/3 cup water to the bottom of the pan.
  9. Place roasting lid on the roaster or cover in aluminum foil.
  10. Place on a low rack in the oven at 175˚.
  11. Roast for 6 to 8 hours, depending on the roast size. For a 4 lb. roast, 6.5 to 7 hours is perfect.
  12. Check the temperature of or your roast and remove it according to your preference. My family likes our roast to be medium-well, so we take it out of the oven when it’s about 150˚ to 155˚ and let it rest for 10 minutes or so before slicing.

Serving Suggestion

Whip up homemade mashed potatoes and keep them healthy by adding just olive or avocado oil and salt as you whip them. Add a steamed veggie or salad and you have a healthy dinner with leftovers for tomorrow! If you prefer a pot roast, just add your potatoes, onions and carrots to the roasting pan in the last hour or so of cooking.
